The Gluten-Free Casseroles That Don’t Taste Like Substitutes

Every top-saved gluten-free casserole on Pepper skips the roux and the noodles and leans on potatoes, rice, tater tots, or vegetables as the starchy anchor.

Home cooks who cook gluten-free stay watchful for the sneaky ingredients — canned soups, cream sauces, and seasoning blends can carry wheat if you’re not reading labels.

The recipes here are all naturally gluten-free or need only a swap — a can of gluten-free cream of chicken, corn tortillas instead of flour, and you’re done.

Quick Tips

  1. 1

    Check every label

Canned soups, broths, sauces, and seasoning packets are the sneaky wheat carriers — buy certified gluten-free versions.

  2. 2

Swap flour for cornstarch or arrowroot

One tablespoon of cornstarch thickens like two of flour — whisk into cold liquid before it hits the pot.

  3. 3

    Use tamari, not soy sauce

Tamari is naturally gluten-free and hits the same salty-umami note in a slow cooker or bake.

  4. 4

    Rest before serving

Casseroles and slow-cooked meats both improve with a 5-10 minute rest — the plate holds together better.
