Why Vegan Cooking Is Cheaper Than You Think

Every top-saved cheap vegan recipe on Pepper is built around the same $2 pantry heroes — dried lentils, canned chickpeas, rice, and a block of tofu.

Home cooks who cook vegan on a budget make the sauce work harder than the protein — peanut, coconut curry, marinara, or tahini can turn a bag of rice into a meal.

The recipes here mostly clock in under $2 per serving and hold in the fridge, so one pot Sunday feeds you through Wednesday.

Quick Tips

  1. 1

    Read the whole recipe first

Every top-saved recipe here has one step that trips people up. Reading ahead prevents the scramble.

  2. 2

    Salt in layers

Vegetables need salt at every stage — a pinch when they hit the pan, another when the sauce goes in, one more at the finish.

  3. 3

    Build umami without meat

Miso, tomato paste, soy or tamari, mushrooms, and nutritional yeast do the savory heavy lifting.

  4. 4

    Rest before serving

Bean stews and pasta bakes both improve with a 5-10 minute rest — the sauce thickens and flavors settle.
