Vegetables in pasta need to be properly cooked — not just thrown in raw. Caramelize, roast, or sauté before they meet the noodles.
Cheese, olive oil, and pasta water do the work that meat usually does. Don't underestimate how rich and satisfying a perfectly emulsified butter-sauce pasta can be.
Cook vegetables separately
Sauté vegetables until properly browned before adding them to pasta. Tossed in raw, they steam and turn watery.
Save the pasta water
Starchy water is the difference between a sauce that coats and one that pools. Reserve a full cup before draining.
Finish in the pan
Drain pasta a minute early and finish cooking it in the sauce. The noodles absorb flavor instead of sliding around in it.
Cheese off heat
Hard cheeses like Parmigiano and Pecorino seize up if added to a screaming-hot pan. Stir in off the burner for a silky finish.
