Open in Pepper →Stir fry is the dinner you can make when the fridge is half empty and everybody is hungry. Chicken, whatever peppers you have, a sauce you stir together in a measuring cup, and it's on the table before the rice finishes.
Cooks on Pepper reach for these on the nights when practice runs late, when there's chicken breast thawed and no plan, or when they want something with a little heat that still feeds the whole table.
Every recipe here is a real weeknight skillet dinner: a plain Chicken Stir Fry with broccoli and bell pepper, Jalapeño Chicken Stir Fry, Teriyaki Chicken Stir-Fry with Rainbow Veggies & Wild Rice, Sweet Chili Chicken Stir Fry, a high protein version with chicken mince and Chinese 5 spice, and a gochujang chicken stir fry over rice.
Cut the chicken small
Slice breasts into 1-inch cubes or thin strips so they cook through in 5 to 6 minutes without drying out.
Toss chicken in cornstarch
A couple tablespoons of cornstarch on the raw chicken gives it a light coating that browns fast and helps the sauce cling.
Get the pan hot first
Heat the oil over medium-high for 2 minutes before anything goes in, and cook the chicken in two batches so it sears instead of steams.
Mix the sauce ahead
Stir soy sauce, garlic, and any chili or gochujang together in a cup before you start, then pour it in during the last 2 minutes.
