Mix the sauce first
Whisk it in a bowl or jar before the pan gets hot. Stir fries move fast, and you only have about 2 minutes at the end to add it.
Thin peanut sauce with water
Peanut butter sauces tighten up as they sit. Add warm water 1 tablespoon at a time until it pours off the spoon.
Add sugar sauces last
Brown sugar teriyaki scorches quickly, so pour it in during the final 1 to 2 minutes and toss constantly.
Cook in two batches
A crowded skillet steams instead of browning. Cook meat and vegetables separately, then combine and sauce at the end.
