One Hot Pan And Dinner Is Done

A stir fry is the meal you make when the meat is thawed, the vegetables are half a bag of this and a handful of that, and everyone is hungry now. Everything cooks in one pan over high heat, and the sauce pulls it together.

Cooks on Pepper reach for these on Tuesday nights, after practice, when there's rice or noodles in the cabinet and no plan past that. They also come back to them when the fridge needs cleaning out.

Every recipe here is a full skillet dinner: Ramen Stir Fry, Easy Stir Fry with linguine and honey soy, Asian Stir Fry with chicken and brown rice, Savory Low-Carb Cabbage and Beef, Steak Stir Fry, Honey Garlic Shrimp Stir Fry, and Chicken Yaki Udon Stir Fry.

Quick Tips

  1. 1

    Cut everything before you start

Once the pan is hot you have about 8 minutes total, so slice the steak, onion, and bell pepper and mix the sauce first.

  2. 2

    Get the pan hot

Heat the oil over medium-high for 2 minutes until it shimmers, so the beef or shrimp sears instead of steaming.

  3. 3

    Cook meat in batches

Give a pound of flank steak or ground beef room in the pan; do it in 2 batches and set the first aside while the second cooks.

  4. 4

    Add sauce at the end

Stir in soy sauce and honey during the last 1 to 2 minutes so it thickens and coats instead of burning.
