Cut everything before you start
Once the pan is hot you have about 8 minutes total, so slice the steak, onion, and bell pepper and mix the sauce first.
Get the pan hot
Heat the oil over medium-high for 2 minutes until it shimmers, so the beef or shrimp sears instead of steaming.
Cook meat in batches
Give a pound of flank steak or ground beef room in the pan; do it in 2 batches and set the first aside while the second cooks.
Add sauce at the end
Stir in soy sauce and honey during the last 1 to 2 minutes so it thickens and coats instead of burning.
