Spinach stuffed chicken with Alfredo

Ingredients

  • Chicken stuffing
  • 4 Chicken breast
  • 6 oz Spinach
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup Mozzarella
  • 8 oz Softened cream cheese
  • 5 cloves Minced garlic
  • 2 tbsp Butter
  • 1 tbsp Cajun Seasoning
  • Pinch of salt and pepper
  • Alfredo Sauce
  • 4 cloves Minced garlic
  • 3 tbsp Butter
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grater)
  • 3 leaves Chopped basil
  • 1 tbsp Fresh chopped Parsley
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • Pinch of salt and pepper
  • 1lb of cooked pasta

Instructions

  1. 1Preheat oven: 400 degrees. Melt 2 Tablespoons of butter into pan on medium heat, add garlic and sauté until a golden brown. Add spinach, cook spinach for about 5 minutes or until cooked.
  2. 2In a bowl, add mozzarella and Parmesan cheese, cream cheese, cooked spinach, salt and pepper. Create a slit/pocket in the chicken. Season the chicken generously with Cajun rub or your rub of choice. Stuff the chicken with spinach and cream cheese mixture. Drizzle small amount of oil on a skillet at medium heat, sear the chicken each side for 2 minutes, finish in the oven for 15-20 minutes.
  3. 3Alfredo sauce: Add butter to a pan at medium heat, add garlic, sauté for about 2 minutes then add heavy cream. Stir together heavy cream and butter until incorporated. Add seasoning, parsley, basil, and stir. Let the cream get to the point it starts steaming, then add cheese while whisking and incorporating the cheese and cream together. Once the cheese and cream are incorporated the sauce should be thick and creamy. Then add pasta.
  4. 4Serve chicken stuffed chicken on top of Alfredo, garnish with grated Parmesan and parsley, enjoy!
