Truffle Black Garlic Roasted Cauliflower

These cauliflower bites are so delicious and full of flavor! They make an excellent appetizer or side dish and will be a hit with even non-veggie lovers. These cauliflower bites can easily be made vegan with the substitution of Follow Your Heart parmesan cheese and vegan butter.

Ingredients

  • 1 head/2lbs Cauliflower
  • 4 tbsp Butter
  • 1 tbsp Black garlic (Trader Joe’s)
  • 1 tbsp Truffle powder (Trader Joe’s)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1/3 cup Grated Parmesan

Instructions

  1. 1Preheat your oven to 450° and prep a baking sheet.
  2. 2Chop your cauliflower in bite sized pieces and line them up on the baking sheet.
  3. 3Melt the butter in the microwave and then mix in the truffle powder, black garlic, salt and pepper.
  4. 4Generously coat each cauliflower bite with the butter and seasoning mixture.
  5. 5Roast the cauliflower bites for 15 minutes and then take them out to flip. Put them back in for another 10 minutes. Remove the cauliflower bites, add the parmesan cheese and put them back in the oven for another 5 minutes to roast.
  6. 6Once the cauliflower bites are done, remove them from the oven.
  7. 7Serve with your favorite truffle aioli or dipping sauce and enjoy!
