Give the breasts at least 30 minutes in dill pickle juice, or up to 4 hours in the fridge, for that tangy, juicy bite.
Cut nuggets even sized
Trim the chicken into 1-inch pieces so they all finish cooking at the same time, about 3 to 4 minutes per batch.
Keep the oil steady
Fry at 350°F and cook in small batches; crowding the pan drops the temperature and leaves the breading soggy.
Make the sauce ahead
