Ingredients

  • 1 bunch asparagus- ends trimmed
  • 3 eggs
  • 2 cups flour
  • 1 1/2 cups panko bread crumbs
  • cajun seasoning
  • garlic powder
  • onion powder
  • mustard powder
  • vegetable oil- for frying
  • 1 cup mayo
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 2 teaspoons fresh lemon juice
  • black pepper
  • garlic powder
  • onion powder
  • mustard powder
  • cayenne pepper
  • salt
  • 1/8 cup fresh parsley- chopped
  • 1/8 cup fresh dill- chopped
  • 3 tablespoons fresh chives- chopped

Instructions

  1. 1to make the ranch: Mix all ingredients in a bowl. Refrigerate for 30 minutes before serving. Store tightly covered in the ice box for up to 2 weeks.
  2. 2Prepare three separate bowls. In one bowl you'll have flour, in another you'll have the eggs, and in the third will be the panko. Season each one the way you like!
  3. 3Coat each asparagus spear in the egg wash, flour, egg wash, and panko and press to ensure they're coated evenly and repeat with all of the spears. Lay on a plate and place into the freezer about 15 minutes.
  4. 4Preheat the oil to 350 degrees F and fry for 3-7 minutes; or until crispy.
  5. 5Remove from oil and drain on paper towels.
  6. 6Serve hot, garnished with parsley, with ranch!
