Make your own simple syrup
Skip the margarita mix and make simple syrup instead — equal parts sugar and water, stirred until dissolved. It takes two minutes and gives you full control over sweetness.
Salt the rim right
Rub just the outside edge of the glass with a lime wedge, then roll only that outer edge in coarse salt. That way guests get salt in every sip without it falling into the drink.
Shake hard with ice
For on-the-rocks margaritas, shake vigorously for 15–20 seconds with plenty of ice. You want it ice cold and properly diluted — a quick shake leaves it too strong and not cold enough.
