Why Peak-Season Strawberries Are Worth Cooking With

A truly ripe, in-season strawberry needs nothing. It's one of the most perfect foods that exists. But the window is short, which makes the best use of strawberries a seasonal urgency.

Beyond the familiar shortcake and jam, strawberries shine in savory applications — balsamic strawberry salads, strawberry gazpacho, and strawberry salsa with grilled chicken or fish. Their acidity and sweetness make them surprisingly versatile.

On Pepper, home cooks return to their favorite strawberry recipes, making sure no delicious preparation is missed during the berry's fleeting season.

Quick Tips

  1. 1

    Macerate for more juice

Toss sliced strawberries with a pinch of sugar and let them sit for 20 minutes. They'll release their own sweet juice, which becomes a sauce for shortcakes, pancakes, and ice cream.

  2. 2

    Buy local in peak season

Supermarket strawberries are bred for shelf life, not flavor. Farmers market or local berries in late spring are an entirely different fruit — buy extra and freeze them for smoothies.

  3. 3

    Balsamic transforms them

A few drops of good balsamic vinegar on ripe strawberries amplifies the berry flavor dramatically. Add black pepper and basil for an easy but impressive dessert.

  4. 4

    Freeze whole for smoothies

Hull ripe strawberries and freeze them on a baking sheet before transferring to a bag. Frozen whole strawberries keep their flavor for months and make better smoothies than store-bought frozen.
