Why Gluten-Free Eating Doesn't Have to Mean Low-Fiber

The trap with gluten-free baking is that most stand-in flours (rice, corn, tapioca) are stripped of fiber. The fix is to skip the wheat substitutes entirely and lean on naturally fibrous bases — certified-GF oats, quinoa, chia, almond flour, beans.

Overnight oats, chickpea salads, apple crisps with GF oats, granola bars — all of them clear 5g+ of fiber per serving without needing a $14 flour blend.

Home cooks on Pepper build their gluten-free game plans by collecting the formats proven to work.

Quick Tips

  1. 1

    Certified GF oats matter

Standard oats are often cross-contaminated with wheat in the field. Buy the GF-labeled bag if you're sensitive.

  2. 2

    Almond flour > rice flour

Higher fiber, higher protein, better texture. Worth the extra cost in baked goods.

  3. 3

    Chia thickens, no gluten needed

A tablespoon of chia in dressings or sauces gives body the way wheat flour does — minus the gluten and plus the fiber.

  4. 4

Read labels on oats and granola

GF-friendly brands flag it on the front. Anything that doesn't is probably cross-contaminated.
