Chicken Quinoa Bowls Lunch

Chicken Quinoa Bowls

Quinoa topped with tomato & cucumber salad, chicken, ricotta cheese, fresh basil and balsamic glaze.

Ingredients

  • 1/2 cup Quinoa
  • Salt
  • Fresh cracked black pepper
  • Pepper
  • 1 cup diced Cucumber
  • 1 cup Cherry tomatoes halved
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • 1/4 tsp Dijon mustard
  • 8-10 ounces Chicken tenders
  • Oil for sautéing
  • Granulated onion
  • 1 dash Green animated garlic
  • 1/4 cup Whole milk ricotta cheese
  • Balsamic glaze

Instructions

  1. 1Cook the quinoa according to package directions. Season to taste with salt and pepper.
  2. 2Coat the chicken tenders with oil then season both sides with the granulated garlic and onion, salt and pepper.
  3. 3Heat a medium sized frying pan over high heat until hot. Add the chicken and reduce the heat to medium/high. Cook for about 3-5 minutes per side or until cooked through (160°F in the thickest part). Cut into bite sized pieces.
  4. 4Add the cucumbers and tomatoes to a bowl. In a jar with a tight fitting lid add the extra virgin olive oil, balsamic vinegar, Dijon mustard 1/4 tsp salt, 1/8 tsp pepper, 1 dash granulated garlic, and shake vigorously until combined. Pour over the veggies and toss until they are evenly coated.
  5. 5Divide the quinoa between two serving dishes. Top with the salad and chicken. Place a dollop of ricotta cheese and the basil on top. Drizzle with balsamic glaze.
