Pancakes at 7pm, Zero Regrets

Breakfast for dinner is the most forgiving meal in the rotation — everyone eats eggs, pancakes are cheap, and the fridge is usually already stocked.

Cooks on Pepper turn to this collection on the weeknights nobody wants to think about dinner — kids love it, adults love it, and the whole thing wraps in one skillet.

Every recipe here works as an actual dinner: substantial enough to fill a plate, savory enough to satisfy, and quick enough that nobody's waiting past 7.

Quick Tips

  1. 1

    Cast iron for everything

Pancakes, hash, frittatas — cast iron gives the crust that a nonstick can't.

  2. 2

    Add a protein

Bacon, sausage, or leftover chicken in the hash makes it dinner instead of a snack.

  3. 3

    Room-temp eggs

Cold eggs from the fridge scramble tough — 15 minutes on the counter first.

  4. 4

    Batch the pancakes

Keep a warm oven at 200°F — pancakes stay hot while you finish the stack.
