Why Comfort Food Never Really Went Anywhere

Mac and cheese, chicken pot pie, meatloaf, chili — the format is a hundred years old and the saves prove it still works.

Cooks on Pepper give it a modern upgrade: better cheese, browner crusts, a little more spice, one less cream soup can.

The best comfort food is the one that tastes like the version you remember, only better executed.

Quick Tips

  1. 1

    Brown before you braise

Meatloaf, meatballs, and pot roast all need a hard sear before they go low and slow.

  2. 2

    Rest the pasta water

A splash of pasta water in the mac and cheese sauce is why the restaurant version emulsifies.

  3. 3

Butter the top of the biscuits

A brush of melted butter before baking gets a golden top every time.

  4. 4

    Season the layers

Every layer of a lasagna needs salt — the sauce, the ricotta, the noodles — or the whole thing is bland.
