Ingredients

  • 4 Green Apples
  • 12 oz Frozen Blueberries
  • 1 Lemon Zest and Juice
  • 1/2 Cup Brown Sugar (Divided)
  • 1 Tbsp Vanilla Extract (Divided)
  • 1/2 tsp Cinnamon
  • 2 Tbsp Margarine
  • 1/3 Cup Matzo Cake Meal
  • 1 1/3 Cup Almond Flour
  • 1/2 tsp Salt
  • 3/4 Cup Oil
  • 6 oz Slivered Almonds

Instructions

  1. 1Peel and Chop the Apples into “Thumbnail” size pieces and melt Margarine over Medium Heat in a Large Non-Stick Sauté Pan
  2. 2Once the Margarine sizzles, add in the Apples and cook for 5-10 Minutes. Then add in the Blueberries, Lemon, Cinnamon, 1/4 Cup of Brown Sugar, and 1/2 Tbsp of Vanilla Extract. Cook until the mix has thickened (about 10-15 minutes) add Potato Starch if needed.
  3. 3For the Crumble Topping; In a Large Mixing Bowl, combine Cake Meal, Almond Flour, 1/4 Cup of Brown Sugar, Slivered Almonds, Salt, Oil and 1/2 Tbsp of Vanilla Extract until the mix resembles wet sand.
  4. 4Pour the Fruit Mix into a Deep 8 in Cake Pan and top with the Crumble Topping and Bake at 350 for 25-30 Minutes
