Ingredients

  • 2 cups Acorn Squash
  • 1 tbsp Olive oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Rosemary
  • 1/2 tsp Thyme
  • 1/2 tsp Sage
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cayenne
  • 3/4 cup Cream or milk
  • 1 cup Shredded mozzarella
  • 1/2 cup Shredded parmesan
  • Pasta
  • 1/2 cup Pasta water
  • Red pepper flakes

Instructions

  1. 1Preheat oven to 425°
  2. 2Cut acorn squash in half and place cut down on baking sheet. Bake for 25 minutes
  3. 3White roasting, cook pasta of choice. Save some pasta water for later and drain the rest
  4. 4Once done roasting, scoop the squash into a pot or Dutch oven and add olive oil, seasonings, and milk of choice
  5. 5Bring to a simmer and mash the squash as much as you can with a spoon. Once mashes blend with an immersion blender or regular blender until smooth
  6. 6Combine pasta, sauce, cheese, and pasta water. Mix well until all cheese is melted. Add more milk if needed
  7. 7Top with red pepper and enjoy!
