Pat the steak dry
Blot both sides with paper towels before oiling. Wet meat steams instead of browning in the first 4 or 5 minutes.
Preheat the basket
Run the air fryer empty at 400°F for 3 to 5 minutes so the steak starts searing the second it lands.
Cut cubes the same size
Aim for 1-inch pieces so every bite finishes at the same time, usually 7 to 10 minutes with a shake halfway.
Rest before you serve
Let steak sit 5 minutes off the heat so the juices stay in the meat instead of on the cutting board.
