A delicious bone-in shank side ham coated with a flavorful bourbon glaze, perfect for a special occasion or holiday meal.

Ingredients

  • 1 6-10 lbs bone-in shank side ham
  • 1 cup orange marmalade
  • 1/2 cup dijon mustard whole grain
  • 1/2 cup real maple syrup
  • 1/3 cup bourbon
  • 3 tbsp fresh squeezed orange juice
  • 1/2 cup packed brown sugar
  • 2 tbsp kosher salt
  • 2 tbsp black pepper
  • 1 tsp ground ginger

Instructions

  1. 1Heat oven or roaster to 325°F.
  2. 2Mix all the ingredients (besides the ham) in a small bowl.
  3. 3Remove ham from packaging, give a quick rinse, and place cut side down in roasting pan. Score ham in a criss-cross pattern all the way around. Brush with about 1/2 cup of the glaze. Cover loosely with foil.
  4. 4Bake for about 2-2 1/2 hours or until the internal temperature reaches 125°F-135°F. Remove foil.
  5. 5Turn oven temperature up to 425°F and brush with glaze again. Bake for another 15-20 minutes, glazing ham every 6-7 minutes. Repeat the process about 3 times.
  6. 6Keep an eye on the ham to prevent the sugars in the glaze from burning. Aim for a deep mahogany color. Once cooking is finished, remove to a cutting board and tent with foil for 20 minutes before carving.

    Warm it, don't cook it

    A fully cooked ham only needs about 10 to 12 minutes per pound at 325°F, covered, until the center hits 140°F.

    Glaze the last half hour

    Brush on honey, brown sugar, or marmalade glaze in the final 20 to 30 minutes so the sugar caramelizes instead of scorching.

    Add liquid to the pan

    Pour 1 to 2 cups of pineapple juice, apple cider, or water in the bottom of the pan to keep the slices from drying out.
