Buckeye Graham Crackers

These buckeye graham crackers combine the decadence of a traditional buckeye with a sweetened crunchy graham cracker base. They are topped with melted chocolate and drizzled with peanut butter chips for a delicious treat.

Ingredients

  • 8-10 squares, halved Graham crackers
  • 1 cup Peanut butter
  • 1/4 cup Unsalted butter, softened
  • 1 1/2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Chocolate chips, melted
  • 1/2 cup Peanut butter chips, melted

Instructions

  1. 1Preheat the oven and line a baking sheet with parchment paper.
  2. 2Break each graham cracker in half to form squares, then place on the prepared baking sheet.
  3. 3In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract until well mixed.
  4. 4Roll the peanut butter mixture into 1-inch balls.
  5. 5Place one peanut butter ball onto each graham cracker square.
  6. 6Carefully flatten each peanut butter ball onto the surface of the graham cracker, spreading to the edges.
  7. 7Melt the chocolate chips and coat each graham cracker with the melted chocolate, letting excess drip off.
  8. 8Drizzle melted peanut butter chips over each chocolate-coated graham cracker.
  9. 9Transfer the baking sheet to the fridge and chill until the chocolate is set.
