Slice potatoes thin and even
Aim for 1/8-inch slices so they cook through in the same time; a mandoline or the slicing side of a box grater keeps them uniform.
Warm the cream first
Heat the half and half or cream until steaming before pouring it over the potatoes; it shaves 10 to 15 minutes off the bake.
Cover then uncover
Bake covered with foil for the first 45 minutes so the potatoes soften, then uncover 20 to 25 minutes to brown the cheese on top.
Let it rest
Give the pan 15 minutes on the counter before serving so the sauce thickens instead of running across the plate.
