  1. 1Ingredies: - 1 rotisserie chicken, meat pulled (about 3.5 cups of meat) - 10 medium flour tortillas of choice - 1 15oz can of black beans, drained & rinsed - 1 10oz can of Rotel, drained (@roteltomatoes ) - 1 28oz can of enchilada sauce (I went with @oldelpaso ) - 1.5 cup shredded cheddar (or more for a cheesier topping!) - 1/4 sour cream - 1.5 tsp cumin - 1.5 tsp chili powder - 1/2 tsp salt
  2. 2Directions: - Preheat oven to 375 - In mixing bowl, slightly mash rinsed black beans (a potato masher works great here if you have one!). Pour in drained Rotel & all of chicken. Mix. - Pour in 3/4 enchilada sauce & 1/4 cup sour cream. Mix. - Pour in seasonings & 1 cup of cheese. Mix. - Spray non-stick baking dish. Pour layer of enchilada sauce on bottom. - Pour about 3/4 cup of chicken mixture on one side of tortilla & tightly roll up. Place in baking dish, seam side down. - Top with enchilada sauce and 1/2 cup cheese (or more if you’d like). - Bake at 375, uncovered, for 30 mins. - Eat as is or top with your favorite toppings (I went with lettuce, avocado, & cilantro 😋)
