Why Homemade Fried Rice Beats Takeout

Homemade fried rice is faster than delivery and tasttes better too. The secret? Day-old rice and a screaming hot pan.

Toss in diced chicken, scrambled eggs, frozen vegetables, soy sauce, and sesame oil. In 15 minutes you have a complete meal.

On Pepper, home cooks return to their favorite fried rice variations again and again—from classic to kimchi to teriyaki.

Quick Tips

  1. 1

    Use day-old rice

Fresh rice is too moist. Leftover rice or rice spread on a sheet pan for 30 min works best.

  2. 2

    Screaming hot pan

High heat is essential for that signature wok hei flavor. Don't crowd the pan.

  3. 3

    Soy sauce at the end

Add soy sauce in the final minute of cooking to prevent the rice from getting soggy.

  4. 4

    Scramble eggs separately

Cook eggs first, chop them up, then fold them back in at the end for the best texture.
