Ingredients

  • 2 spoon Full Creamy Peanut butter
  • 1/2 scoop Protein powder
  • 1 tbsp Sugar free syrup
  • 1/4 cup Mini Chocolate chips
  • A splash Milk

Instructions

  1. 1I heat up the peanut butter to a smooth consistency. Usually stove top at a low temp and occasionally stirring , but if you do microwave it I would about 45 seconds and storing in between.
  2. 2Then I go ahead and add my sugar free syrup, this could be maple syrup or any type of sugar free flavoring. It depends all on how sweet you like it!
  3. 3Add a splash of milk, the mixture will thicken in the next step.
  4. 4Add in your protein powder, you can always add a whole scoop if you want more protein!
  5. 5Once combined, add in your favorite chocolate chips and enjoy! I personally love it the best when there still slightly warm.

Why Cookies Are the Easiest Low-Carb Dessert to Get Right

Cakes and bread need structure that wheat flour gives. Cookies don't. A cookie can be peanut butter + egg + a low-carb sweetener and still come out chewy. That's why almost every successful low-carb dessert format starts with a cookie.

Almond flour is the workhorse — it browns, it crisps, and it adds protein. Pair it with erythritol or a banana for sweetness and you're at 3-5g net carbs per cookie.

On Pepper, the low-carb cookie recipes that perfectly dial in flavor and texture are the ones home cooks return to again and again.

Quick Tips

  1. 1

Three-ingredient PB cookies are the gateway

Peanut butter + egg + sweetener. 4g carbs each, ready in 12 minutes.

  2. 2

    Almond flour browns differently

Pull at 10 minutes — the edges set fast and it goes from golden to burnt in 60 seconds.

  3. 3

    Chill the dough

Almond flour doughs spread too thin without 20 minutes in the fridge first.

  4. 4

Skip the sugar substitutes that crystallize

Erythritol grains stay gritty unless you powder them in a blender first.
