Why Protein Muffins Beat the Coffee-Shop Version

The muffin you buy on the way to work usually has zero protein and around 450 calories of pure refined flour and sugar. You'll be hungry again by 10am, guaranteed.

Swap a third of the flour for protein powder, use Greek yogurt instead of oil, and you get a muffin with 10–20g of protein that actually keeps you full until lunch.

The most well-loved recipes in Pepper’s community are those home cooks return to again and again, tweaking and perfecting until they become staples in their weekly rotation.

Quick Tips

  1. 1

    Greek yogurt for the win

Replaces oil and butter, adds protein, and keeps the crumb tender.

  2. 2

    Don't overbake

Protein muffins go dry fast. Pull them at 18 minutes and let carryover finish the job.

  3. 3

    Mini muffins reheat better

A 60-second microwave revival works on minis. Full-size ones get tough.

  4. 4

    Freeze individually wrapped

Pop one out the night before, thaw on the counter, breakfast handled.
