Why a Good Protein Cookie Beats a Protein Bar

A homemade protein cookie costs about 30 cents to make and contains ingredients you can pronounce. The packaged bar costs $3 and tastes like the wrapper.

Peanut butter does the heavy lifting in most great protein cookies — it's the binder, the fat, and a chunk of the protein all at once. Add a scoop of whey or a handful of almond flour and you're at 8–20g per cookie.

The recipes Pepper's community returns to are often those that fit seamlessly into a healthy lifestyle, offering both satisfaction and convenience. They're the kind of brilliant bakes that transform the three o'clock slump into a moment of pure, guilt-free delight.

Quick Tips

  1. 1

    Underbake by two minutes

Protein cookies set as they cool. Pull them soft and they stay chewy.

  2. 2

    Chill the dough

Twenty minutes in the fridge keeps them from spreading into pancakes.

  3. 3

Skip the egg if using whey

Whey already binds. An egg pushes the texture into cake territory.

  4. 4

    Roll, don't scoop

Even, round balls bake more evenly and look professional.
