Oil the grates hot
Heat the grill to about 400°F, then wipe the grates with an oiled paper towel so the skin doesn't tear when you flip.
Start skin side down
Lay the fillets skin down and leave them alone for 5 to 6 minutes before turning them once.
Pull it at 125
Check the thickest part with a thermometer around 125 to 130°F; it keeps cooking a few minutes off the heat.
Marinate just 30 minutes
Soy and honey marinades only need 30 minutes — longer and the salt firms up the fish and the sugar scorches.
