Soak the beans overnight
Cover dry great northern or navy beans with water by 2 inches and let them sit 8 hours. They cook evenly and won't stay chalky in the middle.
Save the bone
Drop the spiral ham bone in with the beans or soup and let it go 6 to 8 hours on low. It gives you salt, smoke, and body you can't get from broth alone.
Salt at the end
Ham and bouillon are already salty, so wait until the last 30 minutes to taste and season. Beans can also stay firm if salted too early.
Glaze low and slow
Pat brown sugar and honey over the ham, cover, and cook on low 4 to 5 hours, spooning the juices back over it once or twice.
