Brown the beef first
Cook the ground beef over medium-high for 6 to 8 minutes until it's got dark bits, then drain. Dumping it raw into the crockpot leaves it gray and flat-tasting.
Cook onion in the drippings
Leave about a tablespoon of fat in the pan and soften the diced onion 4 to 5 minutes before adding garlic, which only needs 30 seconds.
Add dairy at the end
Stir in milk, cream, or cheese during the last 20 to 30 minutes on low so it doesn't curdle or break.
Cut potatoes the same size
Half-inch dice cooks through in about 20 minutes on the stove and holds its shape in the slow cooker instead of turning to mush.
