Open in Pepper →Cooked chicken, a packet of ranch, cream cheese, bacon, a handful of shredded cheddar — that's the whole idea, and it works every time. It's the kind of pan that comes out bubbling and gets scraped clean before anybody asks what's for dessert.
Cooks on Pepper reach for these on the nights there's leftover chicken in the fridge or a rotisserie bird on the counter, and about forty-five minutes before everyone needs to eat.
Every recipe here is a version of the same good thing: the classic Crack Chicken Casserole, Chicken Bacon Ranch Tater Tot Casserole, Crack Chicken Pierogi Casserole, Chicken Bacon Ranch Potato Bake, and a Low Carb Chicken Ranch Bake with broccoli when you want it lighter on the starch.
Soften the cream cheese
Let an 8-ounce block sit out 30 minutes or microwave it 20 seconds so it stirs smooth instead of leaving white lumps in the casserole.
Cook bacon ahead
Bake 8 slices at 400°F for 15 to 18 minutes, then crumble. Save half to scatter on top after baking so it stays crisp.
Parcook the potatoes
Diced Yukon golds need a head start — microwave them 5 minutes or boil 8 before they go in, or they'll still be firm when the cheese is browned.
Hold back some cheese
Stir most of the cheddar into the filling and sprinkle the last cup on in the final 10 minutes so it melts without turning greasy.
