The Casserole That Uses Up The Rotisserie Chicken

A can of cream of chicken soup, a cup of sour cream, and leftover chicken turn into supper with almost no fuss. These are the casseroles you can put together while the oven heats up.

Cooks on Pepper reach for this collection on the nights everybody gets home late, when there's a rotisserie chicken on the counter and about ten minutes to get something in the oven.

Every recipe here leans on shredded cooked chicken and a creamy base — Million Dollar Chicken Casserole, Chicken Bacon Ranch Casserole, Ritz Cracker Chicken Casserole, Crack Chicken Casserole, Fajita Chicken Casserole, and the Neiman Marcus Chicken Casserole itself.

Quick Tips

  1. 1

    Shred the chicken warm

A rotisserie chicken pulls apart easiest while it's still warm, and one bird gives you about 3 to 4 cups of shredded meat.

  2. 2

    Let the sour cream warm

Set the cup of sour cream out for 15 minutes before mixing so it blends smooth into the soup instead of leaving white streaks.

  3. 3

    Add crackers last

Stir melted butter into the crushed Ritz and scatter them over the top in the final 10 to 15 minutes so they stay crisp, not soggy.

  4. 4

    Rest before serving

Pull the casserole out at 350°F and let it sit 10 minutes so the creamy base sets up enough to spoon clean portions.
