Drain the salmon well
Press the salmon in a strainer for a minute or two to get the liquid out, or your patties will fall apart in the skillet.
Mash the bones in
The soft round bones in canned salmon crush right down with a fork and disappear into the mix, so there's no need to pick them out.
Chill before frying
Shape the patties and set them in the fridge 15 to 20 minutes so they hold together when they hit the hot oil.
Don't crowd the skillet
Fry 3 or 4 patties at a time in about 1/4 inch of oil, 3 to 4 minutes a side, until the crust is deep golden.
