Open in Pepper →Salmon cooks faster than almost anything else you can put on a sheet pan. Ten minutes under high heat and you get a browned top, a moist middle, and one pan to wash.
Cooks on Pepper reach for these when it's late, the oven's already warm, and everybody's hungry — the kind of dinner you start after you walk in the door.
Every recipe here leans on a few pantry things: Honey Glazed Salmon, Garlic Butter Salmon, Garlic lemon salmon MY WAY, Oven baked salmon with lime and Cajun seasoning, and 10min Quick Salmon Fillets.
Pat the fillets dry
Blot both sides with a paper towel before seasoning so the top browns instead of steaming. Wet fish will not take on color.
Move the rack up
Set the oven rack about 6 inches from the broiler element and preheat it for 5 minutes before the fish goes in.
Glaze at the end
Honey and butter glazes burn fast under direct heat, so brush them on during the last 2 to 3 minutes.
Check the thickest part
Salmon is done at 125 to 130°F in the center, or when a fork flakes the thickest spot with a little give left.
