Open in Pepper →Salmon cooks in about ten minutes, and a heavy hand with Cajun seasoning turns it into something that tastes like you worked a lot harder than you did.
Cooks on Pepper reach for these on nights when the fish is thawed, everyone is hungry, and dinner needs to be on the table before anybody asks what's taking so long.
Every recipe here leans on that dark, peppery crust: Cajun Salmon Tacos in mini tortillas, Creamy Cajun Salmon in a skillet sauce, Cajun Salmon with Orzo, and Blackened Salmon Stuffed with Spinach and Parmesan when you want a plated dinner.
Pat the fillets dry
Blot each fillet with paper towels before seasoning so the crust sticks and browns instead of steaming in the pan.
Get the pan hot first
Heat a cast iron skillet over medium-high for 3 to 4 minutes before the salmon goes in.
Season all the way around
Use about a tablespoon of Cajun or blackening seasoning per pound and press it onto every side, including the edges.
Pull it at medium
Cook 3 to 4 minutes per side and take it off when the center just flakes; it keeps cooking on the plate.
