One Pan of Oatmeal Feeds The Week

Oatmeal on the stove is a five-minute job every single morning. Baked oatmeal is one pan on Sunday, cut into squares, warmed up all week while everybody's finding shoes and backpacks.

Cooks on Pepper reach for this collection when mornings are rushed, when there's company sleeping over, or when they want something warm on the table that isn't cereal again.

Every recipe here is a full pan or a batch of cups: baked oatmeal breakfast cups, Strawberry Shortcake Baked Oatmeal, Blueberry Baked Oatmeal, Pumpkin Baked Oatmeal, Chocolate Chip Banana Baked Oatmeal, and a Brownie Baked Oatmeal for the chocolate people.

Quick Tips

  1. 1

    Use old-fashioned oats

Rolled or old-fashioned oats hold their shape and give you a sliceable square. Quick oats turn soft and pasty in a 350°F oven.

  2. 2

    Mash the bananas well

Two very ripe bananas, mashed smooth, sweeten the pan and hold it together. Leave lumps and you get wet pockets in the middle.

  3. 3

    Let it rest before cutting

Give the pan 10 minutes on the counter after baking. It firms up and lifts out in clean squares instead of falling apart.

  4. 4

    Reheat with a splash

Add a tablespoon of milk over a cold square before microwaving 45 to 60 seconds so it comes back soft, not dry.
