Open in Pepper →A pan of tater tots, eggs, sausage and cheese covers breakfast for a crowd without you standing at the stove flipping anything. It bakes while you get everyone moving, and the leftovers reheat just fine the next morning.
Cooks on Pepper reach for these when company is staying over, when it's a holiday morning, or when they want to put something in the fridge Saturday night and bake it Sunday.
Every recipe here is a version worth making: Tater Tot Breakfast Casserole with onion and red bell pepper, a Hash Brown Tater Tot Breakfast Casserole with cream of chicken soup, Cracked Out Tater Tot Breakfast Casserole with bacon and ranch mix, a cheesy one, and Tater Tot Breakfast Casserole with Ham.
Bake the tots first
Spread frozen tots in the pan and bake 15 to 20 minutes before adding eggs so the bottom layer doesn't turn soggy.
Brown the sausage first
Cook a pound of bulk breakfast sausage over medium heat 8 to 10 minutes, breaking it up, and drain the grease before it goes in.
Whisk eggs with dairy
Use about 1/4 cup milk for every 6 eggs and whisk until no streaks of white are left so the custard sets evenly.
Let it rest
Pull the casserole when the center is set, then let it sit 10 minutes so the squares hold together when you cut them.
