Open in Pepper →Taco casserole gives you everything the family likes about taco night without the assembly line of bowls and toppings. It's ground beef, seasoning, cheese, and something starchy underneath, all baked together and scooped straight onto plates.
Cooks on Pepper reach for this collection on the nights when everyone gets home at a different time, since a casserole holds in a warm oven better than a stack of shells ever will.
Every recipe here starts with browned beef or chicken and goes its own way: One Pot Taco Casserole for the fewest dishes, Walking Taco Casserole and Doritos Taco Casserole for the crunch, Keto Taco Casserole and Low Carb Taco Casserole when you're skipping the chips, plus Crockpot Taco Casserole, Cheesy Tater Taco Casserole, and Cheesy Beef and Rice Taco Casserole.
Drain the beef well
Pour off the grease after browning a pound of ground beef, or the casserole turns greasy at the bottom. A minute in a colander is plenty.
Add chips at the end
Crushed chips go on top in the last 5 to 10 minutes of baking so they stay crisp instead of turning to mush.
Cook the seasoning down
Stir the taco seasoning and about 1/2 cup water into the meat and simmer 3 to 4 minutes until it thickens and clings.
Rest before scooping
Let the casserole sit 10 minutes out of the oven so the cheese and filling set up and each serving holds together.
