Pasta Shells Worth Filling By Hand

Stuffing shells takes a few extra minutes at the counter, but you get one pan that feeds everybody and reheats well the next day. Meat, cheese, sauce, done.

Cooks on Pepper reach for these on nights when the family is hungry and nobody wants another skillet of the same thing, or when company is coming and the dish needs to sit in the oven while you clean up.

Every recipe here is a shell or a manicotti with something hearty inside: stuffed manicotti with hamburger and sausage, ground beef stuffed jumbo shells, Beef-Stuffed Shells with Creamy Ricotta Filling, Chicken and Spinach Stuffed Shells, Chili Cheese Stuffed Manicotti, and chicken n gravy stuffed shells.

Quick Tips

  1. 1

    Undercook the shells

Boil jumbo shells or manicotti about 2 minutes shy of the box time so they hold their shape when you stuff them and finish in the oven.

  2. 2

    Rinse and lay flat

Drain the shells, rinse under cool water, and spread them on a sheet pan in a single layer so they don't stick together while you mix the filling.

  3. 3

    Brown and drain the meat

Cook ground beef or sausage until no pink remains, about 8 minutes, then pour off the grease so the filling isn't loose.

  4. 4

    Sauce the pan bottom

Spread 1 cup of sauce in the dish before the shells go in, cover with foil, and bake at 350°F so nothing dries out.
