Undercook the shells
Boil jumbo shells or manicotti about 2 minutes shy of the box time so they hold their shape when you stuff them and finish in the oven.
Rinse and lay flat
Drain the shells, rinse under cool water, and spread them on a sheet pan in a single layer so they don't stick together while you mix the filling.
Brown and drain the meat
Cook ground beef or sausage until no pink remains, about 8 minutes, then pour off the grease so the filling isn't loose.
Sauce the pan bottom
Spread 1 cup of sauce in the dish before the shells go in, cover with foil, and bake at 350°F so nothing dries out.
