Open in Pepper →Meatloaf in the oven means watching the clock. In the slow cooker, you press it together in the morning, put the lid on, and come back to a tender loaf with the glaze already set.
Cooks on Pepper reach for these on long days — ball practice, late shifts, the kind of evening where dinner has to be waiting instead of starting.
Every recipe here is a real meatloaf: Classic Southern Meatloaf with onion and green bell pepper, a Copycat Cracker Barrel Meatloaf built on crushed Ritz, Melt-In-Your-Mouth Crockpot Meatloaf, and a Crock-Pot Meatloaf & Veggies with mini potatoes and baby carrots right in the pot.
Line the crock with foil
Make a foil sling with 2 long strips so you can lift the whole loaf out without it breaking apart.
Shape it into an oval
Free-form the loaf so it doesn't touch the sides; leave about an inch of space all the way around for even cooking.
Add the glaze late
Spread the ketchup glaze on during the last 30 to 45 minutes so it sets instead of thinning out into the juices.
Check the center temp
Cook on low 6 hours or high 3 to 4, and pull it at 160°F in the thickest part.
