A simple and delicious stuffed acorn squash filled with ground turkey, Boursin cheese, herbs, and onion.

Ingredients

  • 1 lb Ground turkey
  • 1 block Boursin cheese (garlic and fine herb)
  • 2 tbsp Herbs de provance
  • 3 acorn squash
  • 1/2 yellow onion

Instructions

  1. 1Preheat oven to 400.
  2. 2Cut the tops off your acorn squash, and use a spoon to scoop out the guts
  3. 3Place the acorn squash cut side down on a baking sheet and bake for 20 minutes. After, a fork should be able to easily slide into the cut side of the squash. If not, bake for 10 more min
  4. 4As the squash bakes, dice yellow onion and sautee in a little bit of olive oil
  5. 5Add ground turkey to onions and cook through
  6. 6Crumble 3/4 of block of Boursin into ground turkey and stir till coated
  7. 7Season with salt, pepper, and herbs de provance
  8. 8Scoop turkey into acorn squash, and crumble Boursin on top
  9. 9Bake for 10 more minutes till cheese is nicely browned
  10. 10Place little squash tops on top and enjoy!
