A cozy roasted butternut squash soup with a creamy, smooth finish.

Ingredients

  • 1 Butternut squash
  • 3 Carrots
  • 1 Onion
  • 2 Garlic
  • 2 stalks Celery
  • Olive oil
  • 2C Veggie stock
  • 1/4 C Heavy cream

Instructions

  1. 1Size veggies for roasting. Lay on roasting pan and drizzle with olive oil and S&P. Cut off the tops of garlic and drizzle with Olive oil and S&P and then wrap in foil.
  2. 2Roast veggies for 30-40 mins at 400
  3. 3I sautéed some onion and celery on the stove while the other veggies roasted.
  4. 4Put veggie stock and all roasted veggies in blender and blend until smooth
  5. 5Put everything back on the stove, warm up and add 1/4 cup of heavy cream.
  6. 6Choose how you want to plate and enjoy
