Squash holds a lot of water, so cook it down and drain it well or the casserole turns soupy.
Drain the squash well
Cook sliced squash and onion 10 to 12 minutes, then press it in a colander to squeeze out the water before mixing.
Salt in layers
Salt the squash while it cooks, then taste again after the cheese goes in so you are not fixing it at the table.
Add crackers at the end
Stir some crumbs into the filling, then scatter the rest on top with melted butter for the last 15 minutes so they stay crisp.
Let it rest
Give the casserole 10 minutes out of the oven before you spoon it up so it sets instead of running across the plate.
