Snap off the woody ends
Bend one spear near the bottom and it breaks right where it turns tough. Line the rest up and cut them to match, usually 1 to 2 inches off.
Roast hot and fast
Use 425°F and give it 10 to 15 minutes, depending on how thick the spears are. Thin ones can be done in 8.
Spread them in one layer
Crowded spears steam instead of brown. Use a full sheet pan for a pound of asparagus and leave a little space between them.
Add cheese at the end
Sprinkle parmesan, asiago, or feta over the spears for the last 2 to 3 minutes so it melts without burning.
