A Sheet Pan Makes Asparagus Easy

Asparagus goes from raw to done in about the time it takes to slice bread, and the oven does all the work. A little oil, salt, and high heat gets you tender spears with browned, crisp tips.

Cooks on Pepper reach for this collection when dinner is already going and they need one more thing on the plate — spring holidays, steak night, or a Tuesday with chicken in the oven anyway.

Every recipe here is a real weeknight side, from Garlic Parmesan Asparagus and plain Oven Roasted Asparagus to Balsamic Lemon Roasted Asparagus, Roasted Asparagus with Asiago Cheese and Bacon, roasted garlic asparagus with feta, and Roasted Asparagus with Prosciutto.

Quick Tips

  1. 1

    Snap off the woody ends

Bend one spear near the bottom and it breaks right where it turns tough. Line the rest up and cut them to match, usually 1 to 2 inches off.

  2. 2

    Roast hot and fast

Use 425°F and give it 10 to 15 minutes, depending on how thick the spears are. Thin ones can be done in 8.

  3. 3

    Spread them in one layer

Crowded spears steam instead of brown. Use a full sheet pan for a pound of asparagus and leave a little space between them.

  4. 4

    Add cheese at the end

Sprinkle parmesan, asiago, or feta over the spears for the last 2 to 3 minutes so it melts without burning.
