Open in Pepper →A bunch of asparagus can sit in the crisper all week, but wrap it in bacon and it disappears off the pan before dinner is even plated. The bacon fat does the seasoning for you, and the spears come out tender with crisp tips.
Cooks on Pepper reach for these when they need one more thing on the table — a holiday spread, a steak night, or a Tuesday when the oven is already on for chicken.
Every recipe here is asparagus and pork in some form: candied bacon wrapped asparagus with butter and brown sugar, a plain bacon wrapped version with olive oil, Gigi P's Garlicky-Prosciutto Wrapped Asparagus, and prosciutto wrapped spears with softened cream cheese.
Snap off the woody ends
Bend one spear until it breaks and line the rest up to cut there — usually the bottom 1 to 2 inches.
Use thin sliced bacon
Thick cut needs 30 minutes to crisp and the asparagus turns mushy; thin slices cook through in about 20 minutes at 400°F.
Bundle three or four spears
Wrap 3 to 4 spears together with one bacon slice so the bundle holds and you get bacon in every bite.
Bake on a wire rack
Set the rack over a sheet pan so grease drips away and the bacon crisps on all sides instead of steaming.
