Snap off the woody ends
Bend a stalk near the bottom and it breaks right where it turns tough. Line the rest of the bunch up with it and cut in one pass.

Lay the spears in a single layer with a little space between them; two batches of 6 to 8 minutes beats one soggy pile.

Parmesan or Asiago burns fast, so sprinkle it on in the last 2 minutes and let the heat just melt it.
