Open in Pepper →When the zucchini keeps coming, a casserole is the honest answer. It takes a pile of squash, a little cheese, and turns it into something the whole table will actually finish.
Cooks on Pepper reach for these in July and August, when the garden is ahead of them, or any night they want dinner in one dish and no side to think about.
Every recipe here leans on zucchini and cheese, from Mediterranean Chicken Zucchini Bake and Zucchini Casserole with Ground Beef to Zuchinni-Squash Casserole, Tomato Zucchini Gratin, and Creamy Sausage, Tomato and Zucchini Bake.
Salt the zucchini first
Toss sliced zucchini with 1 to 2 teaspoons kosher salt and let it sit 20 to 30 minutes, then blot dry. That pulls out the water that makes casseroles soupy.
Brown the meat first
Cook ground beef or Italian sausage with the onion for 6 to 8 minutes and drain the fat before it goes in the dish.
Slice rounds evenly
Cut zucchini into rounds about 1/4 inch thick so everything cooks at the same rate instead of some slices turning to mush.
Rest before serving
Let the casserole sit 10 to 15 minutes out of the oven so the cheese and juices set up and it scoops instead of runs.
