Ingredients

  • 3-4 large Large sweet potatoes
  • 2 Eggs - beaten
  • 1/2 cup White sugar
  • 1/2 cup Evaporated milk
  • 18 tbsp Softened butter
  • 1 tsp Vanilla extract
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Packed brown sugar
  • 2/3 cup Flour (gf or AP)
  • 1 cup Chopped pecans

Instructions

  1. 1Turn oven to 350 degrees and wrap sweet potatoes in foil. Bake until you can squeeze the sides and it has a little bit of give.
  2. 2Scoop out the insides of the sweet potatoes into a bowl. Let cool to room temperature and then mash.
  3. 3Mix the mashed sweet potatoes with 4 tablespoons of the butter, sugar, eggs, salt, vanilla extract, spices and evaporated milk until well combined.
  4. 4Spray a 9 x 13 baking dish with cooking spray and transfer potato mixture to baking dish.
  5. 5Make topping: mix brown sugar and your choice of flour together in a medium bowl. Cut in the remaining butter with a pastry cutter or fork until mixture is course and kind of looks like the size of peas. Don’t over mix. FOLD in pecans (where are my Schitts Creek fans. Just fold it in David!)
  6. 6Sprinkle topping over the top of the potatoes evenly, being sure to cover all potatoes.
  7. 7Bake in preheated oven until topping is just golden brown. 25-30 minutes or so. Enjoy!!!
