Slice the potatoes thin
Cut peeled russets about 1/8 inch thick so they cook through in the same 60 to 75 minutes as the beef. Thick slices stay crunchy in the middle.
Brown and drain the beef
Cook the ground beef with the chopped onion for 6 to 8 minutes, then pour off the grease so the casserole doesn't turn oily.
Cover then uncover
Bake covered with foil for the first 45 minutes to steam the potatoes tender, then uncover for 15 to 20 minutes to brown the cheese on top.
Bake tots from frozen
Spread tater tots straight from the freezer in a single layer and bake at 375°F so they crisp instead of going soft.
