Peach French Toast Bake

Let the aroma of baked peaches, brown sugar and cinnamon wake up your family. When you serve the tender slices of French toast, be sure to scoop up the golden syrup in the bottom of the pan and drizzle it over the top.

Ingredients

  • 6 cup Brioche Bread
  • 2 cup Slices Peaches
  • 2 cup Milk
  • 1 cup Half & Half
  • 4 Egga
  • 1/2 cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • Salt
  • 1/2 tbsp Butter

Instructions

  1. 1Preheat your oven to 350 degrees Fahrenheit. Butter or spray an 8x8-inch or 9x9-inch baking dish
  2. 2Cut the brioche into cubes. Layer the bottom of the dish with half of the bread cubes (3 cups). Scatter half of the sliced peaches (1 cup) over the bread cubes.
  3. 3Repeat steps 2 and 3 with the remaining half of the bread cubes and peaches. In a large bowl, whisk together the milk, half and half, eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt.
  4. 4Pour the egg/milk mixture over the bread cubes and peaches. Gently stir the mixture so the bread soaks up the liquid, but try not to break the bread. Bake for 1 hour, or until the casserole is golden brown on top and set in the center, with no liquid remaining in the bottom of the dish. If the top of the bread is getting too brown but there is still liquid remaining, carefully cover the baking pan with foil and continue baking.
  5. 5Slice into squares and serve hot with maple syrup and your favorite toppings.

One Pan Breakfast Everybody Comes Back For

French toast one slice at a time keeps you at the stove while everyone else eats. Bake it in a dish and the whole table sits down together, with soft custardy middles and crisp buttery edges.

Cooks on Pepper reach for these on Christmas morning, when family is staying over, or any Sunday they want to put breakfast in the oven and go pour coffee.

Every recipe here is a real casserole: Peach French Toast Bake on brioche, a Crock pot Cinnamon Roll Casserole, Apple Pie French Toast Bake with Granny Smiths, Blueberry and Mixed Berry French Toast Bakes, and plain French Toast Casserole made with sourdough or heavy cream.

Quick Tips

  1. 1

    Use day-old bread

Stale bread soaks up custard without turning to mush; if yours is fresh, cube it and dry it in a 300°F oven for 10 minutes.

  2. 2

    Soak it overnight

Cover and refrigerate at least 4 hours, or overnight, so the egg and milk reach the center of every cube.

  3. 3

    Cover then uncover

Bake covered with foil for the first 25 minutes, then uncover for 20 to 25 more so the top browns without drying out.

  4. 4

    Let it rest

Give the casserole 10 minutes out of the oven before scooping so the custard sets and squares hold together.
